Low Carb Chicken Parm Over Spaghetti Squash

- Mix grated Parmesan cheese (except for 2 tablespoons, for the end), Italian seasonings, salt and fresh ground pepper in a flat wide bowl.
- Clean and dry boneless, skinless chicken breasts. Pound to about 1/4 inch thick.
- Whisk 2 eggs with a tablespoon of whole milk in a bowl that will allow you to dip the chicken pieces.
- Dip chicken in the egg mixture and then dredge in the "breading" (the cheese and seasoning mix).
- Heat an oven-safe skillet with olive oil and, once hot, brown the first side of the chicken breasts in an oven-safe saute pan.
- Turn chicken over. Add marinara sauce around (but not under or over) the chicken -- we want the "breading" to maintain some substance rather then get soggy.
- Add sliced fresh mozzarella over each piece of chicken.
- Sprinkle a little more Parmesan over all.
- Bake at 350 for 10-15 minutes (chicken will be done at 165 (f)).
- Serve over prepared spaghetti squash pasta.
