Low Carb Chicken Parm Over Spaghetti Squash

Ingredients

  1. Mix grated Parmesan cheese (except for 2 tablespoons, for the end), Italian seasonings, salt and fresh ground pepper in a flat wide bowl.
  2. Clean and dry boneless, skinless chicken breasts. Pound to about 1/4 inch thick.
  3. Whisk 2 eggs with a tablespoon of whole milk in a bowl that will allow you to dip the chicken pieces.
  4. Dip chicken in the egg mixture and then dredge in the "breading" (the cheese and seasoning mix).
  5. Heat an oven-safe skillet with olive oil and, once hot, brown the first side of the chicken breasts in an oven-safe saute pan.
  6. Turn chicken over. Add marinara sauce around (but not under or over) the chicken -- we want the "breading" to maintain some substance rather then get soggy.
  7. Add sliced fresh mozzarella over each piece of chicken.
  8. Sprinkle a little more Parmesan over all.
  9. Bake at 350 for 10-15 minutes (chicken will be done at 165 (f)).
  10. Serve over prepared spaghetti squash pasta.
