Baking these fluffy, aromatic muffins filled the house with the seasonal flavors of pumpkin and spice that we all know and love. I chose to add a few - not too many - semi-sweet chocolate chips and chopped walnuts to bring some layers of complexity to the muffin experience. They turned out really yummy.
Recipe:
1 1/2 cups flour
1 1/2 cups sugar
1 teaspoon baking soda
3/4 teaspoon salt
3/4 teaspoon ground nutmeg
3/4 teaspoon ground cinnamon
1 cup solid pack pumpkin puree
1/2 cup water
1/2 cup vegetable oil
1/2 stick soft sweet butter
2 large eggs
1/2 cup chopped walnuts
1/2 semi-sweet chocolate chips
Grease and flour 2 standard sized loaf pans and preheat oven to 350F. Mix together all dry ingredients. Add the remaining ingredients and beat until well blended. Pour into pans and bake for about an hour.
