Alice's Homemade Tortillas

When Alice told me she makes homemade tortillas I could barely contain my delight. Anyone who has had a good homemade tortilla knows how much better they are than the store bought version. She promised to get a batch to me and am I glad she did! I made Brie & Caramelized Onion Quesadillas served with Stonewall's Maple Bacon Onion Jam (available at Sur la Table) and some fresh avocado for a small dinner party. We scarfed them down in literally minutes. These tortillas were truly deee-licious and a big hit at the party!! Thanks, Alice!

Low Carb Chicken Parm Over Faux Pasta

This chicken Parmesan dish is delicious, easy and low-carb, which Michael loves! Create the "breading": mix together 1 1/2 cups of finely grated Parmesan cheese, a dash of your favorite Italian seasonings (dried oregano and/or thyme), salt, fresh ground pepper. Clean and dry boneless, skinless chicken breasts. Pound to about 1/4 inch thick. Whisk 2 eggs with a tablespoon of whole milk. Dip chicken in the egg mixture and dredge in the "breading". Brown on one side in an oven-safe saute pan. Turn over. Add marinara sauce around (but not under) chicken. Add a slice of fresh mozzarella over each piece of chicken. Sprinkle a little more Parmesan over all. Bake at 350 for 10-15 minutes. Serve over spaghetti squash. Deliciousness without the carbs!

Sur la Table Vitamix Demo

Here I am at Sur la Table demo'ing the Vitamix. I made a Creamy Broccoli Curry Soup. The Vitamix, seriously, it's an awesome machine. I sauteed some leeks in butter, then added a little vegetable broth and broccoli florets until they softened. Toss that all into the Vitamix with a little cream, a dash of curry and salt, and blend, Baby, blend. The super cool thing about this machine is that it actually heats the soup at the right levels. Very cool.

The Melissa

A replication of one of Michael's go to low-carb dishes at Bistro Aix, a favorite San Francisco neighborhood restaurant. It's not on the menu, his friend Melissa -- a restaurant regular -- has specially requested this low-carb treat. Ask for The Melissa, they'll know what you mean. Pan-seared halibut over green beans topped with a buttery white wine sauce. Deee-lish!
